Zucchini Bread

Boy have I been slacking! Last year, I had zucchini coming out of my garden the size of Popeye's forearms! I literally pulled several as long as my arm! (Remember, I'm short, so, my sons would tell me that my arm isn't a great way of measuring, but, still!) I knew that there was no way I was going to get my family to just eat all of that zucchini, so, I needed to come up with a bread recipe and fast! Here's what I got!

1 cup oil (I use canola for everything, but, vegetable is fine, too)
1 1/2 cups granulated sugar
1 cup loosely packed brown sugar
1 tbsp vanilla
3 eggs
3 cups bread flour
1 tsp salt
1 tsp baking powder
1 tsp baking soda
1 tbsp ground cinnamon
2 cups grated zucchini (do NOT drain, you need the juice!)
1 cup mini chocolate chips
Cinnamon sugar for sprinkling

Preheat oven to 325 degrees. Grease and flour two loaf pans. Sift flour, salt, baking powder, baking soda, and cinnamon together in a bowl and set aside. Beat oil, sugars, and eggs together in a large bowl. Add vanilla. Beat in flour mixture. It may get a little stiff. Add the zucchini. I typically still do this with my stand mixer. You can change to a paddle blade, if you feel the need. Stir in chocolate chips. Divide the mixture between the two prepared pans. Sprinkle cinnamon sugar evenly across the tops of both loaves. Bake 50-60 minutes until the middle is set and a toothpick comes out clean. Cool in the pan for 20-30 minutes and then remove to a rack for complete cooling. I like to slice mine and add butter!

Amish Friendship Bread

Starter

Day One:
1 package of active dry yeast
1/4 cup warm water
1 Tbsp Sugar
1 cup milk (slightly warmed)
1 cup sugar
1 cup bread flour

In a small bowl, mix yeast, warm water and Tbsp of sugar. Let sit until bubbly. Once bubbly, pour into a gallon-size Ziploc bag. Add milk to bag. Mix sugar and flour together, thoroughly in a bowl. Add this mixture to the bag and mash well to mix all ingredients.

Days 2, 3, and 4

Just mash the bag to continue mixing and let out any accumulated air.

Day 5

Add another cup each of bread flour, sugar, and milk. Mash the bag to mix everything thoroughly.

Days 6, 7, 8, and 9.

Mash bag and let out air.

Day 10

Add another cup each of bread flour, sugar, and milk. Mash and mix. Use one cup to make your own bread, give two cups away, and keep one for your next round.

Bread Recipe

1 cup starter
1 cup oil
1 cup sugar
2 tsp vanilla
3 eggs
1/2 cup milk
2 cups bread flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tsp ground cinnamon
1 large box instant pudding mix (vanilla or chocolate)

Next, you'll need two cups of fillers. My preference depends on whether I'm using vanilla or choclate pudding mix. If I'm using chocolate, I use a combination of chocolate and peanut butter chips. I've been known to add Reese's pieces, white chocolate chips, or even toffee chips. Vanilla pudding typically calls for fruit and/or nuts in my opinion. Dried apricots, dried apples, pecans, walnuts, raisins, etc. Play with it and find your combination.

Preheat oven to 325. Grease and flour two loaf pans. I actually like to grease and sprinkle cinnamon sugar in mine. In a small bowl, sift together dry ingredients except pudding. In a larger bowl, stir together all of the wet ingredients. Add dry mixture and mix well. (I typically all of this by hand. I also tend to use glass bowls and wooden spoons. I don't know for sure if there's a science behind it or superstition. That's just how I learned to do it.) Stir in pudding. Fold in your fillers. Pour into loaf pans. Bake for one hour or until a knife inserted into the center comes out clean.

Wow! It sure has been a while since I updated this page. I realized I never added my banana bread recipe. So, here it is.

Banana Nut Bread

2 cups bread flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
1/2 cup butter-flavored shortening
3 bananas
1/2 cup sugar
1/2 cup loosely packed brown sugar
2 eggs
1/2 cup chopped nuts (I prefer walnuts)

Preheat oven to 350. Spray a loaf pan or line muffin tins. Blend flour, salt, soda, and baking powder together in a bowl. In your mixer, mash bananas and add in shortening. Once those two look like a goopy mess, add in your sugars. Mix thoroughly. Add in eggs one at a time. Slowly add in flour mixture. Once that has thoroughly mixed, fold in your nuts. Pour into loaf pan or muffin tins. Muffins take about 20 minutes to bake. A loaf needs about an hour.

I wanted chocolate chip muffins one morning and I wanted the JUMBO ones with crusty sugar on top. So, I decided to bake them myself instead of sending someone to get them. They were a hit. As a matter of fact, Nathan and Matt weren't home that morning and were very upset to find out I had made them. LUCKILY, there were a few leftover...

Chocolate Chip Muffins

2 cups bread flour
1 TBSP baking powder
1 tsp salt
1/3 cup oil

1/2 cup sugar
1/4 cup brown sugar
1 tsp vanilla
1 egg
1 cup milk
1 cup mini chocolate chips

Extra large sugar granules or sprinkles for garnish

Preheat oven to 400 degrees. Line jumbo muffin tins. In a large bowl, combine sugars and oil until well blended. Add vanilla and egg, stirring well. Sift in dry ingredients and alternate with milk until completely mixed. Stir in chocolate chips. I like to spray my muffin linters with a bit of cooking spray before baking. Fill cups about 2/3 full and sprinkle sugar on top. Bake for 18-20 minutes until golden brown. I love these straight out of the oven with butter!

Benjamin randomly asked me one day to make him some chocolate bread. Chocolate bread? I had never even HEARD of chocolate bread! What was I to do but take up the challenge? So, here is what came out of it.

Chocolate Bread

1 cup sugar
1 stick butter (melted)
2 eggs
1 tsp vanilla
1 1/2 cups bread flour
3/4 cup baking cocoa
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
1 cup buttermilk
1 cup mini chocolate chips

Preheat oven to 350. Grease a loaf pan. Combine butter sugar and vanilla until well blended. Add eggs one at a time, mixing well. Sift together dry ingredients. Alternately blend in dry ingredients and buttermilk a little at a time until all is blended. Stir in chocolate chips. Bake 55-60 minutes until toothpick comes out clean. Cool a bit, slice and eat! I like mine hot with a little butter...

This recipe is one my family LOVES and only gets at certain times during the year. Fall is the time for pumpkins and pumpkin bread. I use fresh pumpkin and shred it after the kids have made their jack-o-lanterns. The great thing is, I really don't have to work hard on the pumpkin because the little scraper thing we use pretty much shreds it for me!

Pumpkin Bread

1/2 cup oil
1/4 cup melted butter
3 eggs
1/4 cup milk
1/2 cup brown sugar
1 tsp vanilla

2 1/4 cups flour
1 tsp baking soda
1/2 tsp salt
1 cup sugar
1/2 tsp baking powder
2 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp ground cloves

3 cups shredded pumpkin

Preheat oven to 325. Sift together flour, soda, salt, baking powder, sugar, cinnamon, ginger, and cloves in a small bowl. In a larger bowl, mix together the rest of the ingredients until well-blended. Slowly add in dry ingredients until well blended. Stir in pumpkin. Pour into greased, floured loaf pan and bake for 1 hour and 15 minutes.

I am still trying to make some of our favorite dishes healthier. Today, I tried making some healthier banana bread. It turned out really good. Time to share the recipe :)

Healthier Banana Bread

6 bananas
1 cup butter flavored shortening
1 cup brown sugar
1 cup sugar substitute (Splenda)
4 eggs
1 cup flour
1 cup wheat bran
2 cups wheat flour
2 tsp salt
2 tsp baking powder
2 tsp baking soda
1 cup chopped nuts (optional)
               or
1 cup chocolate chips (optional)

Preheat oven to 350. Grease two loaf pans. In a medium bowl, combine flour, wheat bran, wheat flour, salt, baking powder, and baking soda. Set aside. Peel bananas and place in a large mixing bowl. Mix on low speed until well blended. Add shortening and continue to blend until well mixed. Add both sugars and blend until well mixed. Add eggs one at a time beating well after each addition. Add flour mixture and be sure to mix well. Stir in nuts and/or chocolate chips. Divide between loaf pans. Bake for 1 hour.

Shannon's Pancakes

3 cups self-rising flour
1/4-1/2 cup sugar
1 TBSP baking powder
2 eggs
1/4 cup oil
2 cups milk
2 tsp vanilla

Sift flour, sugar (depending on how sweet you like pancakes prior to adding syrup), and baking powder together. add egg, oil, vanilla, and one cup of milk. Stir with a whisk. Add milk until you reach a batter that is your desired consistency. I like my batter just a little bit thin. You may prefer yours thicker or a bit more runny. This recipe usually makes from 18-20 good sized pancakes. Just enough for my family. You can add all kinds of things to these, nuts, blueberries, chocolate chips. I will suggest, if you do chocolate chips, you might want to add a bit more sugar.

I came up with this recipe today. Benjamin actually asked for seconds. He doesn't even know it is good for him! I am trying to add more whole grains, bran, etc to our diet. I hope you like this one.

Chocolate Chip Bran Muffins

1 c milk
1/2 c molasses
3/4 c applesauce
2 eggs
2 T canola oil
1/4 c brown sugar
1 c wheat bran
3/4 c wheat flour
3/4 c white all purpose flour
1 tsp baking soda
1 tsp baking powder
1 c semi-sweet chocolate chips

Preheat oven to 400. Line and spray two regular sized muffin pans. In a mixing bowl, combine milk, molasses, applesauce, eggs, oil, and brown sugar. Blend until mixed well. In a separate bowl, combine bran, flours, soda, and powder. Add to wet mixture. Mix well until all dry ingredients are incorporated. Stir in chocolate chips. Bake for 15-20 minutes. Makes 24 muffins.

I had a few pie pumpkins that needed baking, so, I baked them and made this next recipe. My family RAVED about it and ate almost two loaves within the first 24 hours. I love to play with recipes and make up my own. This one just worked so well, I don't think I will play with it any more except to maybe add chocolate chips or nuts for some variation. I also made muffins and sprinkled the top with cinnamon sugar. DELICIOUS :)

Pumpkin Bread

1 C. Butter Flavored Shortening
1 1/2 C. Sugar
1 C. Brown Sugar
3 eggs
3 C. Flour
1 1/2 tsp baking soda
1 T baking powder
2 tsp cinnamon
3/4 tsp ground cloves
1 tsp ginger
2 cups pumpkin

Mix together the shortening and sugars until creamy. Add eggs one at a time. Sift together dry ingredients and slowly blend in. Add pumpkin. Pour into two well greased loaf pans. Bake at 350 for one hour.

*I use fresh pumpkin that I bake and mash. I also like to use bread flour over regular all purpose.

Beer Bread

This is a great recipe for beer bread. My family adores it when I make my bread. Matthew was in the kitchen today when I got the ingredients out and he got so excited when he saw what I was doing. This recipe is easy and requires almost no skills in the kitchen!

1 12 oz can of beer
3 cups of flour (I prefer bread flour)
1 1/2 tsp baking powder
1 tsp salt
1/3 cup brown sugar
1 stick butter (melted)
1 cup sharp shredded cheddar (optional)

Preheat oven to 375. Grease loaf pan. Sift flour, baking powder, salt and sugar together. Add beer and half of butter to this mixture. Mix in cheese. Pour into pan and bake for 40 minutes. Baste bread with remaining butter. Bake another 10 minutes or so until no longer soft in the middle.

There are any number of variations that can be done to this bread. An herb mixture of maybe basil and a hint of oregano with a garlic butter would be good for an Italian meal. Try it, play with it, and tell me what you think!
