Sugar Free Banana Nut Bread


Banana Nut Bread

2 cups bread flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
1/2 cup butter-flavored shortening
2 bananas
1/4 cup Stevia or Splenda blend for baking
1/4 cup Splenda (or alternative) brown sugar blend
2 eggs
1/2 cup chopped nuts (I prefer walnuts)

Preheat oven to 350. Spray a loaf pan or line muffin tins. Blend flour, salt, soda, and baking powder together in a bowl. In your mixer, mash bananas and add in shortening. Once those two look like a goopy mess, add in your sugars. Mix thoroughly. Add in eggs one at a time. Slowly add in flour mixture. Once that has thoroughly mixed, fold in your nuts. Pour into loaf pan or muffin tins. Muffins take about 20 minutes to bake. A loaf needs about an hour.

Frozen Sweet Treats

I came up with this one because Mama had bought these certain ice cream bars that she wanted to try. They were strawberry flavored and coated in white chocolate. When she later looked at them for real, each one had 74 GRAMS OF SUGAR! I had already made up this one to keep her from feeling quite so deprived of he things that she loves. It's not hard. Just requires a little time. These treats have ten grams or less of sugar and not all of that is added sugar. I'm not giving specific measurements for this one because it's totally up to you how much strawberry you want, how much chocolate, and how much yogurt.

Low sugar/sugar free vanilla yogurt

Wash and dry the strawberries. Cut them up into 1/4 inch chunks. Drizzle Magic Shell over the strawberry chunks. Again, as little or as much as you want. Layer yogurt into the bottom of a popsicle mold. Alternate strawberries and yogurt in the mold until full. Freeze until you are ready to eat. These turned out so much better than I had hoped they would!

I decided to try to make sugar-free, healthy brownies today. I must have done a good job because Mama asked for seconds! This recipe makes a cake-like brownie which is what my mother loves. I personally prefer a fudgy one, so, I am going to work on making a fudgy one that is sugar free as well. :)


1/3 cup unsweetened cocoa powder

2 eggs

1 1/4 cup  Splenda (sucralose artificial sweetener)

1/2 cup all-purpose flour

1/2 cup wheat flour

1/2 teaspoon salt

1/4 teaspoon baking soda

1/2 teaspoon baking powder

1/2 cup skim milk

1/2 cup chopped walnuts or chocolate chips  (optional)


2 Spray Pam and flour an 8x8-inch pan.

3 In a small saucepan, over medium heat, melt margarine and cocoa together, stirring occasionally until smooth.

4 Remove from heat and set aside to cool.

5 In a large bowl, beat eggs until frothy.

6 Stir in sucrolose sugar.

7 Combine the flours, salt, baking soda and powder; stir into the egg mixture then mix in the cocoa and margarine.

8 Finally stir in the 1/2 cup of milk and if desired, the walnuts or chocolate chips.

9 Pour into the prepared pan bake for 15 minutes in the preheated oven.

10 Stick in a toothpick--when it comes out clean its done.

11 Let cool and then cut into squares.

I am on a roll today! I bought some apples the other day, a whole bag full of them. The problem is, we never end up eating the whole bag because they get forgotten. So, I decided to make something with the apples today. I now have a diabetes friendly recipe for apple squares.

Apple Squares



  • 1/2 cup butter-flavored shortening
  • 1 cup packed brown sugar
  • 1/2 cup Splenda
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 chopped apples
  • 1/2 cup finely chopped pecans
  • 1 cup sifted all-purpose flour
  • 1/2 cup wheat flour
  • 1/2 cup wheat bran
  • 2 tsp baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon




  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 13x9 inch pan. Sift together flour, baking powder, salt, and cinnamon; stir in wheat bran and set aside.
  2. In a large bowl, mix together shortening, brown sugar, Splenda until smooth. Stir in the egg and vanilla. Blend in the flour mixture until just combined, then stir in the apples and pecans. Spread the mixture evenly into the prepared pan. 
  3. Bake for 25 to 30 minutes in preheated oven; finished bars should spring back when lightly touched. Cool in the pan, and cut into squares.

I drizzled mine with a loose powdered sugar frosting. Just mix together powdered sugar and milk until slightly runny and drizzle over the squares. Delish!!!

I am still learning to cook healthier and make diabetes friendly food. Here is the recipe I came up with today.

Peanut Butter/Wheat Bran Cookies



  • 1 cup butter flavored shortening
  • 1 cup packed brown sugar
  • 1/2 cup Splenda
  • 1 teaspoon vanilla extract
  • 1 cup peanut butter
  • 2 eggs, beaten
  • 1 1/4 cups cake flour
  • 1/2 cup wheat flour
  • 1 cup wheat bran
  • 2 teaspoons baking soda

  1. Preheat oven to 325 degrees F.
  2. In a bowl, beat together the butter, brown sugar, Splenda, vanilla, peanut butter and eggs. In a separate bowl, mix the flours, bran, and baking soda. Stir the flour mixture into the butter mixture until smooth. Drop by rounded teaspoons onto an ungreased cookie sheet.
  3. Bake for 11 to 13 minutes in the preheated oven. Remove to a rack to cool.





  • 1/2 cup butter
  • Preheat oven to 350°.
