I wanted a dip I could make in the crock pot and I wanted seafood. I piddled around and came up with this one.

Yummy Seafood Dip

8 oz package cream cheese
1 can cream of celery soup
1 cup shredded cheddar cheese
1 cup shredded monterey jack cheese
1 tsp salt
1 tsp black pepper
1 tsp garlic
1 tsp paprika
1/4 cup finely diced green bell pepper
1/4 cup finely diced onion
8 oz crab meat
8 oz mini shrimp
1 cup lobster diced about 1/4 to 1/2 inch

Warm the cream cheese in the microwave until it softens. Mix cream cheese and all other ingredients into the crock pot. Cook on high for around two hours or low for four. Stir occasionally. You may want to add extra cheese or spices to taste, but, this is what worked for us. I served it with chunks of asiago bread that were slightly warmed. It was a hit!

My mother and I have been craving crab cakes for the last couple of days. I have never made them homemade before today and I must say, they turned out REALLY good! I made up a recipe and the seasonings. A lot of people like to just use Old Bay, which is fine, but, I am not much for Old Bay seasoning, so, I made up my own spice mix.

Crab Cakes

12 oz crab meat (I used canned, but fresh is always better I would use 1 lb fresh)
1 egg
2 Tbsp mayonnaise
1 tsp Worcestershire sauce
1 3/4 cup bread crumbs (I used panko)
1/2 tsp salt
1/2 tsp pepper
1/2 tsp mustard powder
1 tsp paprika
1/4 tsp chili powder


Drain crab meat and pour into a bowl. Add the egg, mayo, Worcestershire, 3/4 cup of bread crumbs and spices. Carefully mix everything together. You don't want to break the crab meat up a lot. Form into patties (I made six) and place in remaining panko in a shallow dish, coating each side. Place in preheated pan on medium high heat and fry. I used a combination of olive oil and butter to fry in. Carefully turn when the cakes start to brown on bottom to a golden color. I sprinkled lemon juice on top when ready to eat. I hope you try and enjoy this dish! We did!

I sometimes will randomly come up with things just because I think it sounds good. Well, most of the time, that works. I served these last night when we had some friends over for New Year's. Four trays full disappeared. It also helps get rid of leftover turkey!

Open-Faced Turkey Sammies

Sourdough Bread sliced
Leftover Turkey sliced
Gouda plain, smoked, or both shredded or sliced.
1/2 cup mayonnaise
1 Tbsp cranberry sauce

Cut the sourdough into 2x2" squares or corners. It doesn't have to be fancy. Place thin layers of turkey on the bread. Light or dark meat, it doesn't really matter. I prefer to shred the gouda because it is easier to distribute. Place this on top of the turkey. Place the sandwiches under the broiler until the cheese melts and bread browns on edges. Mix the mayo and cranberry sauce until well blended. Use this mixture as a topping for the sandwiches. I like to just serve it in a bowl and to each his own. Enjoy!

I stole this recipe from my sister, tweaked it, and made it better. I took one to school yesterday. It was half gone in a little over a half hour. I was shocked! I get addicted when I start making these. Chris was very upset when he realized I had made one to take to school without telling him. There's a reason for that...

Cheese Ball

3 packages cream cheese
2 cups sharp cheddar shredded
1/2 cup colby jack shredded
1 package Hidden Valley Ranch seasoning
3/4-1 cup chopped pecans

Mix all the cheeses and ranch seasoning together well in a large bowl. I like to let it sit overnight in a ball. Lay the pecans out in a single row. Roll the ball in the nuts until well coated. Serve with crackers.



This is my first recipe post. This appetizer has been a favorite every time I make it for an occasion. I like to make it when I host home parties for various in-home sales parties. I won't go into specific names of companies here, but, there have been several!

Pinwheel Sandwiches

1 package cream cheese
1 package Knorr Vegetable seasoning mix
1 8 or 10 count large flour tortillas
1 lb smoked turkey thinly sliced
1 lb provolone cheese thinly sliced

In a bowl, mix room-temperature cream cheese with half of the package of seasoning mix (trust me, HALF is plenty!). Once this is well mixed, spread about a half tablespoon of the mix on a tortilla evenly. Lay one slice of turkey on top of the mixture, in the middle of the tortilla. Lay two slices of cheese side by side in the middle of the tortilla. Roll the tortilla tightly and let rest for a couple of minutes, seam side down. Using a serrated knife, slice tortilla rolls every 1/4" to 1/2" depending on how thick you want your rolls. I find that these taste better if made fresh the day of your event. Enjoy!
